Wine making process:
Grapes are selected and dried in well ventilated rooms. After few months (January) they are destalked and pressed. The must is stored in small oak barrel (50 to 200 litres) for at least 8 years. Then the blend is done in stainless steel before bottling.
It is bottled without filtration and without added sulphites, as it was done during the aging in oak and steel. The only sulphites contained are the ones naturally developed during the alcoholic fermentation. Because of this it is able to continue the evolution in bottle as it was in oak, as it is shown by the light sediment that starts creating after some years.
