Venti is a Vin Santo del Chianti DOC (Denomination of Origin Controlled) is produced with selected Trebbiano Toscano and Malvasia grapes coming only from our vineyards.
The production rules say that grapes must dry out naturally until 1st December after the harvest, the wine has to be vinified and aged in small barrels (caratelli) smaller than 500 liters. The wine cannot be sold before the 1st November of the third year after the harvest. But Venti was managed in a different way.
Venti was aged in caratelli for 20 years then refines in bottle. All the evolution was naturally developed following Nature and not marketing.
